Golden Crispy Baked Eggplant

Crispy, golden baked eggplant slices coated in parmesan and Italian seasoning. A delicious and healthier alternative to fried eggplant.

 

Ingredients

1 eggplant

1 egg

1 tsp water

1 cup bread crumbs

1/2 cup grated Parmesan cheese

2 tablespoons Italian seasoning

1 tablespoon oregano

3 tablespoons olive oil

Instructions

  1. Preheat the oven to 375°F.
  2. Coat a baking sheet with olive oil. (Lining with foil is an option; parchment baking is not suitable).
  3. Rinse eggplant and cut into 1/2-inch slices.
  4. In a bowl wide enough for eggplant slices, whisk together the egg and water.
  5. In a separate bowl, mix together the bread crumbs, oregano, italian seasoning, and parmesan.
  6. Dip each eggplant slice in the egg mixture, then into the bread crumb mixture, coating both sides.
  7. Place slices at least 1/2-inch apart on the baking tray.
  8. Bake for approximately 20 minutes, or until golden brown on the bottom.
  9. Flip the slices, and cook for another 10 minutes, until golden brown on that side.
  10. Remove from the oven and enjoy. (These taste great dipped in caesar dressing).
